Green Power Smoothie

Hi everyone! Happy New Year! Welcome to 2016! I hope everyone is starting the year well rested and in a positive state of mind. I know I am. 

It's been a MONTH since my last blog post. I'm so sorry for taking such a long hiatus, but I needed it. December was a crazy month! Work was really busy, I was spending a lot of time (and money) Christmas shopping, and I picked up some freelance work to make some extra money. Plus, the weekends were filled with family and friends and parties and PLENTY of snacks and drinks that shouldn't even be mentioned on Lighter Bites - oops. Dieting is HARD around the holidays, you guys! But the new year is here and with it, a time to start fresh.

Speaking of fresh, THIS SMOOTHIE.



I may not strike you as a smoothie kind of girl, and you'd be right. This is new to me. I've had them in the past, but it was never a regular thing for me. But now? With this smoothie? Yes please.

Let me back up. The path that led me to create this smoothie wasn't so straightforward. First, I've probably mentioned here that I'm a member of Weight Watchers. I've had a lot of success with this program in the past. I'd say I strictly follow the program 80% of the time - the other 20% (usually on weekends) I allow myself some leeway, such as an extra snack or drink. Well, Weight Watchers revamped their program last year - you'll see my recipes now list the Smart Points value instead of the PointsPlus value. I'm still figuring the Smart Points out, but a lot of the things I eat regularly have gone up.

Another factor: I don't eat breakfast at home. It's just not realistic for me. I get up early, get ready, and rush to make the train every day. In the past, I'd keep oatmeal packets in my desk at work and make one with hot water around 9:30 every morning. If you know anything about oatmeal, you know it's easy and convenient - and not very filling. I'd be satisfied for a couple of hours, but my stomach would start rumbling for lunch before noon.

The oatmeal I usually eat went from 4 PointsPlus to 5 Smart Points. I didn't feel like spending 5 of my daily points on something so small and unsatisfying, so I began brainstorming different ideas for breakfast.




The criteria? It needed to be easy. Healthy. Satisfying. Something I could prepare at home in advance and bring with me. And ideally, no more than 4 Smart Points.

I thought a green smoothie may be a good idea. I was never a regular smoothie drinker, but I did a juice fast before my wedding and it did not end well. I was all gung-ho to go 10 days on juice only, but after 3 days I just couldn't stomach the juices that tasted like vegetables. Smoothies are different - green smoothies, at least the ones I've tried, are FULL of veggies (like spinach) but you can't even taste it. Bonus!

The hard part was perfecting the smoothie. I've tried recipes that were Greek-yogurt based, but I don't think I could drink this every day. First of all, Green yogurt can be bland, and when it's overpowering everything else in the smoothie it just tastes thick and blah. Plus, too much yogurt equals higher Smart Points.

So I turned to Google and searched for "green smoothies with spinach." (Spinach is my green of choice for smoothies - I know kale is super trendy right now, but I have not been able to jump on that bandwagon. I just don't like it that much, you guys.) I read through a bunch of the results, and it seemed that a lot of green smoothies had the same few ingredients in common:

  • spinach
  • a banana (frozen or not)
  • a nut milk


Then, depending on the smoothie, other extra ingredients were added in. So I started my smoothie with those three ingredients and played around with quantities and add-ins. I've been wanting to experiment with vanilla protein powder for a while, so I decided to see if I could figure out a way to work it into my smoothie.

WELL. After a few failed attempts (nothing inedible, thank goodness, because I still drank the ones that didn't make it here), I came up with a green smoothie that I really, really like. I've been back to work for a week since the holidays and I've brought a smoothie for breakfast every day. I plan to do the same this week. And hopefully for many weeks to come (#newyearnewme, right?).

And did I mention it's filling? My stomach hasn't started growling for lunch until after 1:00 all week long.

I really hope you like these! If you're looking for a quick, easy, delicious, and filling breakfast that you can prepare in advance, this smoothie is for you.











Ingredients

  • 1 1/4 cups unsweetened vanilla-flavored nut milk (I use Almond Breeze Unsweetened Almond Cashew mix, vanilla flavor)
  • 2 cups baby spinach (or 2 large handfuls)
  • 1 scoop of vanilla protein powder (I use 100% Natural Only Protein)
  • 2 tbsp plain fat-free Greek yogurt
  • 2 tbsp PB2 powdered peanut butter (mixed with 1 tbsp water)
  • 1 banana, frozen


Serving size: 1 smoothie
Weight Watchers Smart Points value: 4

Instructions

  1. Add all ingredients to a blender and liquefy. Serve immediately, or refrigerate overnight and enjoy for breakfast.


TIPS 
  • I read that putting the liquid (the milk) into the blender first helps the blades move and not get stuck, so I recommend doing that.
  • The banana doesn't have to be frozen, but freezing it beforehand helps give the smoothie a thicker consistency. I like to peel a bunch of bananas and put them in a Ziplock in my freezer so I can grab one when I need it.
  • If you're planning on drinking this immediately, try adding 2 or 3 ice cubes to the blender to make the smoothie extra cool and delicious.

Pillsbury Biscuit Calzones

Is it just me, or does the end-of-the-year craziness have anyone else wishing for more hours in the day? I feel like I just posted my last recipe, when in reality it's been over 2 weeks! So I apologize again for the delay between posts. I'm hoping to be able to post more often in 2016!

Before I dive in to today's recipe, I just wanted to send a huge thank you to everyone who reads this blog and shares my recipes. This is still really new for me, and I appreciate any and all support. Lighter Bites has officially hit 250 likes on Facebook, and we are close to 100 followers on Instagram. In the grand scheme of things, that's not many people, but the support means the world to me. So thank you!

Now, the reason we're all here: FOOD. I mentioned in my last post that I love Pillsbury crescent rolls because they're so versatile - you can fill them with chocolate and make a dessert, or you can fill them with meat, cheese, etc and make a meal. I love filling them with ham and cheese or pepperoni and cheese and making mini healthy calzones.


I use Weight Watchers American cheese slices for the ham calzones and Weight Watchers mozzarella string cheese for the pepperoni calzones. Once these babies are baked and warm and gooey, you can't even notice that the cheese is low fat/low calorie.

These really are super easy to make. When I make these as a meal, I usually make four - I have two for dinner (one ham, one pepperoni) and put two in a tupperware for lunch the following day (they still taste good after being microwaved). The Pillsbury crescent rolls contains eight rolls, so if you don't think you'll use the remaining four soon, I suggest making eight calzones and refrigerating the ones you don't eat. Even in a Ziplock bag, the Pillsbury dough doesn't last very long in the fridge once it's been open. For this recipe, I made eight.

Anyway, on to this super easy, super fast recipe. All you have to do is separate the crescent rolls and lay them on a baking sheet sprayed with no-calorie cooking spray. Arrange the ham, pepperoni, and cheeses on the crescent rolls, then sprinkle with salt, pepper, and garlic powder to taste.






Carefully roll up the crescents so that all the meat and cheese is sealed inside. They don't have to look pretty - sealing everything in is the bigger priority here. If the filling sticks out a little bit, it's okay.


Bake at 375 degrees F for 9-12 minutes, or until the tops are golden brown. Remove from the oven and let cool for a minute or two, then dig in!

INGREDIENTS

  • 8 Pillsbury crescent rolls, reduced fat
  • 4 slices reduced fat American cheese (I use Weight Watchers brand)
  • 4 low-fat mozzarella string cheese sticks (I use Weight Watchers brand)
  • 6 slices ham (I like to use honey ham)
  • 20 slices turkey pepperoni
  • Salt, pepper, and garlic powder (to taste)

Serving size: 2 calzones (1 pepperoni, 1 ham)
Weight Watchers SmartPoints value: 11

INSTRUCTIONS

  1. Preheat oven to 375 degrees F. Lightly spray a baking dish with no-calorie cooking spray.
  2. Separate the crescent rolls along the pre-cut edges and lay out on the baking sheet. Top 4 of the rolls with 1 slice of American cheese each and 4 of the rolls with 1 string cheese each (you'll need to break the cheeses apart to get them to fit on the roll).
  3. On the rolls with American cheese, top each with 1 1/2 slices of ham (you'll need to fold or tear the ham to get it to fit). On the rolls with string cheese, top each with 5 slices of turkey pepperoni. Sprinkle salt, pepper, and garlic powder across the tops of all the rolls.
  4. Carefully fold the rolls so that the cheese and meat are sealed inside. Pinch edges together to seal. In some cases you may not be able to completely seal in the filling - this is okay. As long as it's mostly sealed you'll be fine.
  5. Make for 9-12 minutes or until the tops are golden brown. Remove from the oven and serve warm.

Note: nutrition information is for one ham calzone and one pepperoni calzone.

Avocado Ranch Coleslaw

Well HELLO! I apologize for getting a little off-track with my posts the last couple of weeks. Work was really busy and then I was thrown off by the holiday weekend. I hope everyone who had a three-day weekend enjoyed it! My parents have a house in upstate New York and every Memorial Day my dad's side of the family heads up there. There are tents and bonfires and games and music and singing and hanging out by the pool ... oh, and there's a TON of eating. And drinking. Let's just say Memorial Day weekend is NOT a Weight Watchers weekend. Oh well ... worth it.

But, the holiday is over and I need some healthy food back in my life. Enter this week's recipe: Avocado Ranch Coleslaw! 



I absolutely love coleslaw. But prepared the traditional way, with a ton of mayo, it's definitely not healthy. Another thing I absolutely love is avocado. Especially in summer. Something about fresh avocado (and homemade guacamole) just resembles summer to me. I came up with the idea to combine the two, and it worked out pretty nicely. The addition of ranch is just because I think ranch dressing makes everything better. Wings, veggies - what doesn't benefit from a little ranch?

Anyway, let's discuss this recipe. It's really easy and tasty too. And I'm already thinking of ways it can be used other than just as a side dish (hint: I think it would be REALLY yummy on shrimp tacos. There may or may not be a recipe coming soon that uses this coleslaw that way ...)

Start with a package of coleslaw in a large bowl. I usually buy Dole Classic Coleslaw when I make slaw, but any brand will do.



Then, in a small bowl, combine everything else (avocado, ranch, sour cream, mayo, and vinegar). The avocado I used was perfectly ripe, so I only needed to use a spoon to combine everything. If your avocado is still a little hard, you may need to use a hand mixer. I think that avocados taste the best when they're slightly mushy to touch but still firm overall. They're also much easier to mix when they're like this.



Add the avocado mix to the slaw and stir, stir, stir until the slaw is coated evenly. Season generously with salt, pepper, and garlic powder and stir again.




Cover and refrigerate until ready to serve. It tastes best if you're able to refrigerate for at least an hour. Since this uses avocado, it may start to brown after a day or so, so I recommend making this when you know you'll be eating it or serving it within a day.

Before serving, sprinkle with salt, pepper, and garlic powder again and give it a final stir to combine.

That's it! It's good on the side of a summer meal, but I personally think it would be even better when incorporated into a meal, like on a burger or sandwich, or inside some shrimp tacos ... (hint, hint)!

  • 1 bag coleslaw mix 
  • 1 medium avocado (about 7 oz), shelled and pit discarded
  • 3 tbsp fat free ranch dressing
  • 1 tbsp fat free sour cream
  • 1 tbsp low fat mayonnaise
  • 1/2 tsp white vinegar
  • Salt, pepper, and garlic powder (to taste, but I recommend being generous with these)


Serving size: 1/4 of recipe
Weight Watchers PointsPlus value: 3


Instructions


  1. Empty the coleslaw mix into a large bowl. Set aside.
  2. In a small bowl, combine the avocado, ranch, sour cream, mayo, and vinegar. Depending on how soft your avocado is, you may need a hand mixer for this.
  3. Add the avocado mix to the slaw and stir until the slaw is evenly coated. Season generously with salt, pepper, and garlic powder, and stir to combine.
  4. Cover and refrigerate until ready to serve (I recommend refrigerating for at least an hour, and serving within a day).
  5. Before serving, season again with salt, pepper, and garlic powder and give the slaw a final stir.

Chocolate Chip Pumpkin "Pancake" Muffins

It doesn't get much easier than this.




Throw a bunch of ingredients into a bowl, mix them up, put them in a pan, and bake. That's it.

I don't know if I could handle much more than that on a beautiful Saturday like the one we're having today.










To check if the muffins are done baking, stick a knife or a toothpick into the middle of one. If it comes out clean, they're done! (Note: If there's some melted chocolate on the knife, that's okay - as long as there's no batter).

I made these last Sunday ... I ate one immediately, then wrapped the pan in foil and put it in the fridge. I took one to work each day for breakfast. They taste especially good if you microwave them for 10-20 seconds before eating ... the chocolate gets all melty and delicious and perfect.

I plan on doing the same thing this week with the batch I just made.

That's really it. This might be the easiest recipe I've ever created.

  • 1 cup Heart Smart Bisquick pancake & baking mix
  • 1/3 cup Libby’s 100% pure pumpkin
  • 1/4 cup pancake syrup (I use Aunt Jemima Butter Light)
  • 3 oz nonfat plain Greek yogurt
  • 3 tbsp chocolate chips (I use Nestle Toll House semi sweet)
  • 1 tsp ground cinnamon
  • 2 tsp vanilla extract
  • 1 zero-calorie sweetener packet (I use Sweet & Low)


Serving size: 1 muffin
Weight Watchers PointsPlus value: 4

Instructions

  1. Preheat the oven to 425 degrees. Spray a 6-cup muffin pan with no-calorie nonstick cooking spray and set aside.
  2. In a medium bowl, combine all ingredients. Distribute mix evenly among the muffin cups.
  3. Bake for 15-17 minutes until the muffins are golden brown on top and a knife or toothpick inserted into the center comes out clean.

Chicken Stuffed with Spinach, Ricotta, and Sun-Dried Tomatoes

Hi guys. Me again. And I brought a friend, Spinach and Ricotta. Remember him? He's awesome. But this time, he brought Sun-Dried Tomatoes along and let me tell you, three is most definitely NOT a crowd with this group.



This recipe is so easy and delicious. It's perfect for a quick after-work dinner or to make over the weekend and refrigerate for lunches for the week. I've made a lot of chicken in my lifetime, but I think I can officially say this will be my new go-to recipe.

It's really easy too, you guys. You just need to cut your chicken breasts in half lengthwise, mix up your filling, and spread it on the chicken. Cutting chicken breasts lengthwise isn't the easiest thing to do, but you'll be okay if you use a sharp knife. I promise. Also, it doesn't have to be perfect. Just cut them in half lengthwise as best as you can.

Then, mix up your filling. It's important to use sun-dried tomatoes that are NOT in oil. It's much healthier this way.




Then just spread the filling across the chicken halves, top with the other halves, and bake!



The end result? Perfectly cooked chicken with a warm, cheesy, spinachy (I'm officially making "spinachy" a word - I'm an editor, pretty sure I can do that) filling.




Ta-da! I made this for the first time a few days ago and sent a picture to my friend since I knew she loved the Spinach and Ricotta English Muffin Pizzas I posted a few weeks ago. I know she'll be making this, and I'd love to know if you try it, too!

Ingredients

  • 4 5-oz boneless, skinless chicken breasts (I use Perdue Perfect Portions)
  • 1/2 cup part skin ricotta cheese
  • 1/2 cup frozen chopped spinach, cooked according to package instructions (TIP: I cook the whole package [9 or 10 oz, depending on the brand] and just store the leftovers in a tupperware in the refrigerator)
  • 6 sun-dried tomato halves, not in oil, chopped
  • 1/4 cup grated pecorino Romano cheese (or grated parmesan cheese)
  • Salt, pepper, and garlic powder (to taste)

Serving size: One stuffed chicken breast
Weight Watchers PointsPlus value: 5


Instructions

  1. Preheat the oven to 400 degrees. Spray a baking sheet with nonstick, no-calorie cooking spray and set aside.
  2. Using a very sharp knife, carefully halve the chicken breasts lengthwise. If the chicken isn’t very thick, this will be difficult, but doable. If you don’t get the halves exactly even, it’s fine. Close enough is fine – we’re not striving for perfection here.
  3. In a medium mixing bowl, combine the ricotta, spinach, sun-dried tomatoes, and grated cheese. Season with salt, pepper, and garlic powder and mix to combine.
  4. From the chicken breast halves, take the four larger halves and arrange them on the baking sheet. Distribute the spinach mixture evenly across all four halves, then top with the smaller halves.
  5. Bake for 15 minutes at 400 degrees. Let the chicken cool slightly (just a couple of minutes) before serving.

Lightened-Up Carbonara Pasta

This dish right here is the definition of a happy accident. I hadn't gone food shopping this week and worked late a few nights and needed to make something quick. I boiled some pasta and was rummaging through my fridge to see what I could add to it. I had some bacon, an onion, and a pepper. I found some peas in the freezer, added a makeshift cheese "sauce," and was pleasantly surprised with the outcome.



It wasn't until later that I realized it resembled a carbonara. I knew I needed to add it to the blog.

It's really quite easy to make. Start by chopping and cooking your veggies.



While they're cooking, prepare the pasta. Add the cheese wedges and mix - this will serve as your "sauce."



Now, I'm not a professionally trained chef (shocking, I know). I make meals that are easy, tasty, and diet-friendly. Maybe one day I'll learn how to cook a real, professional sauce but until then, these The Laughing Cow cheese wedges work just fine.

When the veggies are done, add them to the pasta and stir to combine.



If your cheese wedges didn't melt fully before, they'll definitely melt when you add the hot, cooked veggies and stir. 

Next up, BACON. I never liked bacon as a kid, but as an adult I've developed a taste for it. I'm late to the game, I know. But the point is, I like it now and I use it in lots of recipes and it really just takes them from good to great. For this recipe, cook the bacon, then crumble it over the pasta and stir to combine.





Finally, add the grated cheese, season with salt and pepper, and BOOM. Lightened-up carbonara pasta. 

I made this tonight (Sunday) and plan on bringing it to work for lunch this week. It can be microwaved and eaten hot, or eaten cold as a pasta salad - it's great both ways.

Ingredients

  • 12 oz (1 box) shell pasta, cooked according to package instructions
  • 1 medium green bell pepper, finely chopped
  • 1 medium onion, finely chopped
  • 1 cup frozen peas
  • 5 wedges The Laughing Cow Light Creamy Swiss cheese
  • 10 slices Oscar Mayer center cut bacon (or brand of your choice)
  • 1/4 cup grated parmesan cheese
  • Salt and pepper (to taste)


Serving size: 1/5 of recipe
Weight Watchers PointsPlus value: 9

Instructions

  1. Spray a large frying pan or skillet with no-calorie nonstick cooking spray. Place it on the stove on medium/high heat and add the green pepper, onion, and peas. Stirring occasionally, cook until the veggies are soft and slightly brown, about 10-12 minutes. (Note: It saves time if you cook the pasta while the veggies are cooking).
  2. When the pasta is cooked, drain it and then transfer to a large bowl.
  3. While the pasta is still hot, add the cheese wedges to the bowl and stir immediately to melt and combine. If the cheese doesn’t melt fully, don’t worry – you’ll stir again after you add the cooked veggies.
  4. When the vegetables are done cooking, add them to the pasta and stir to combine.
  5. Cook the bacon according to package instructions (I always microwave mine, it’s fastest and easiest). Crumble the bacon over the pasta and then stir to combine (I usually just wait until the bacon cools off and then break it into pieces with my fingers).
  6. Add the grated cheese and stir to combine. Season with salt and pepper, give it one final stir, and serve!
